For the Fish
4rainbow trout fillets (6-8 oz each)
2tablespoons extra virgin olive oil
2lemons(1 sliced, 1 for juicing)
4garlic cloves, minced
2tablespoons fresh dill, chopped
2tablespoons fresh parsley, chopped
1tablespoon fresh thyme leaves
1teaspoon sea salt
1/2teaspoon black pepper
4sprigs fresh rosemary

Preheat oven to 200°C (400°F). Line a baking sheet with parchment paper.

Pat the trout fillets dry with paper towels and place them skin-side down on the prepared baking sheet.
