  • 2 large onions, thinly sliced
  • 3 cloves garlic, minced
  • 2 tablespoons ghee or avocado oil
  • 1 tablespoon fresh thyme leaves
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons bone broth (optional)

  1. Clean mushrooms with a damp paper towel and slice them evenly (about 1/4 inch thick).
  2. Peel and slice onions into thin half-moons.
  3. Heat ghee or avocado oil in a large skillet over medium-high heat (175°C/350°F).
  4. Add sliced onions to the pan and cook for 5-7 minutes until they begin to soften.
  5. Add mushrooms to the pan and spread them in a single layer. Let them cook undisturbed for 3-4 minutes.
  6. Add minced garlic, thyme, salt, and pepper.
  7. Continue cooking for 8-10 minutes, stirring occasionally, until mushrooms are golden brown and onions are caramelized.
  8. If using bone broth, add it now and cook for an additional 2 minutes until liquid is reduced.
