- 8 high-quality pork sausages (sugar-free for paleo)
- 2 medium sweet potatoes, cut into 1-inch chunks
- 3 medium parsnips, cut into 1-inch pieces
- 2 large carrots, cut into 1-inch pieces
- 1 red onion, cut into wedges
- 2 medium beetroots, peeled and cut into wedges
For the Seasoning
- 3 tablespoons olive oil
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme leaves
- 4 garlic cloves, minced
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper
- 1 tablespoon balsamic vinegar (optional)
Instructions
- Preheat oven to 200°C (400°F).
- In a large mixing bowl, combine olive oil, rosemary, thyme, minced garlic, salt, and pepper.
- Add all cut vegetables to the bowl and toss well to coat with the herb mixture.
- Spread the seasoned vegetables evenly in a large roasting pan.
- Place the sausages on top of the vegetables.
- Bake for 20 minutes, then turn the sausages and stir the vegetables.
- Continue baking for another 20-25 minutes until sausages are golden brown and vegetables are tender.
- Optional: Drizzle with balsamic vinegar before serving.

- For extra crispy vegetables, avoid overcrowding the pan
