Main Components
- 2 large sweet potatoes (about 800g), diced into 1cm cubes
- 8 slices bacon (sugar-free for paleo)
- 4 large eggs
- 1 medium onion, diced
- 2 cloves garlic, minced
Seasonings
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- ½ teaspoon sea salt
- ¼ teaspoon black pepper
- 2 tablespoons olive oil
Optional Garnish
- Fresh parsley, chopped
- Green onions, sliced
- Avocado slices
Instructions
Prep Ingredients
- Dice sweet potatoes into 1cm cubes
- Chop onion and mince garlic
- Cut bacon into 1-inch pieces
Cook Bacon
- Heat skillet over medium heat
- Cook bacon pieces until crispy (8-10 minutes)
- Remove with slotted spoon, leave 2 tablespoons fat in pan
Cook Sweet Potatoes
- Add olive oil to bacon fat
- Add sweet potatoes to skillet
- Cook for 10-12 minutes, stirring occasionally
- Temperature: 180°C/350°F
Add Aromatics
- Add onion and garlic
- Cook for 5 minutes until onions are translucent
- Add seasonings and stir well
Create Wells and Add Eggs
- Make 4 wells in the hash
- Crack an egg into each well
- Cover and cook 5-7 minutes until whites are set
- Temperature: 160°C/320°F
Finish and Serve
- Sprinkle with crispy bacon
- Add optional garnishes
- Serve immediately
