Ingredients
For the Beef
- 1 pound (450g) grass-fed ground beef
- 1 tablespoon olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 tablespoons homemade taco seasoning (recipe below)
- 1/2 cup water
Homemade Taco Seasoning (Paleo-friendly)
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon cayenne pepper (optional)
For the Bowl Base
- 4 cups cauliflower rice
- 2 tablespoons olive oil
- Salt and pepper to taste
Toppings
- 2 large ripe avocados, sliced
- 2 cups cherry tomatoes, halved
- 1 cup fresh cilantro, chopped
- 1 lime, cut into wedges
- 1 red onion, finely diced
- 2 cups shredded lettuce
Instructions
- Prepare the Taco Seasoning:
- Mix all seasoning ingredients in a small bowl
- Store extra seasoning in an airtight container
- Cook the Cauliflower Rice:
- Heat 2 tablespoons olive oil in a large skillet over medium heat (175°C/350°F)
- Add cauliflower rice
- Cook for 5-7 minutes until tender
- Season with salt and pepper
- Set aside and keep warm
- Cook the Ground Beef:
- Heat 1 tablespoon olive oil in the same skillet over medium-high heat (190°C/375°F)
- Add diced onion and cook until translucent (3-4 minutes)
- Add minced garlic and cook for 1 minute
- Add ground beef, breaking it up with a spatula
- Cook until browned (5-7 minutes)
- Add taco seasoning and water
- Simmer until liquid reduces (3-4 minutes)
- Assemble the Bowls:
- Divide cauliflower rice among 4 bowls
- Top with seasoned ground beef
- Add sliced avocado, tomatoes, red onion, and lettuce
- Garnish with cilantro and lime wedges
