Ingredients
For the Prawns
- 500g large prawns, peeled and deveined
- 4 tablespoons grass-fed butter or ghee
- 6 cloves garlic, minced
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes
- 2 tablespoons fresh lemon juice
For the Zucchini Noodles
- 4 large zucchini
- 2 tablespoons extra virgin olive oil
- 1/2 teaspoon sea salt
- 1/4 cup fresh parsley, chopped
Instructions
- Prepare the Zucchini
- Wash and trim the ends of the zucchini
- Using a spiralizer or julienne peeler, create noodles from the zucchini
- Place noodles in a colander, sprinkle with salt, and let sit for 10 minutes to release excess water
- Pat dry with paper towels
- Prepare the Prawns
- Pat prawns dry with paper towels
- Season with salt and pepper
- Heat a large skillet over medium-high heat (180°C/350°F)
- Add 2 tablespoons butter or ghee
- Cook the Prawns
- Add prawns to the hot pan in a single layer
- Cook for 2-3 minutes per side until pink and slightly golden
- Remove prawns from pan and set aside
- Make the Sauce
- In the same pan, add remaining butter
- Add minced garlic and red pepper flakes
- Sauté for 30 seconds until fragrant
- Add lemon juice and stir
- Cook the Zucchini Noodles
- Add olive oil to the pan
- Add zucchini noodles
- Cook for 2-3 minutes, stirring occasionally (don’t overcook)
- Return prawns to the pan
- Toss everything together
- Finish and Serve
- Garnish with fresh parsley
- Serve immediately while hot
