Cook Bacon

  • Heat skillet over medium heat
  • Cook bacon pieces until crispy (8-10 minutes)
  • Remove with slotted spoon, leave 2 tablespoons fat in pan

Cook Sweet Potatoes

  • Add olive oil to bacon fat
  • Add sweet potatoes to skillet
  • Cook for 10-12 minutes, stirring occasionally
  • Temperature: 180°C/350°F

Add Aromatics

  • Add onion and garlic
  • Cook for 5 minutes until onions are translucent
  • Add seasonings and stir well

Create Wells and Add Eggs

  • Make 4 wells in the hash
  • Crack an egg into each well
  • Cover and cook 5-7 minutes until whites are set
  • Temperature: 160°C/320°F

Finish and Serve

  • Sprinkle with crispy bacon
  • Add optional garnishes
  • Serve immediately
