Ingredients
- 1 pound ground turkey (93% lean)
- 1 tablespoon olive oil
- 1 teaspoon sea salt
- 1 teaspoon ground sage
- 1 teaspoon ground black pepper
- ½ teaspoon dried thyme
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ¼ teaspoon ground fennel seeds
- ¼ teaspoon red pepper flakes (optional)
- 1 tablespoon fresh parsley, finely chopped
Instructions
- In a large mixing bowl, combine ground turkey with all seasonings and herbs. Mix gently with your hands until well combined, but don’t overmix.
- Divide the mixture into 8 equal portions (about 2 ounces each).
- Form each portion into a patty about ½-inch thick. Make a small dimple in the center of each patty with your thumb to prevent it from puffing up during cooking.
- Heat olive oil in a large skillet over medium heat (175°C/350°F).
- Once hot, add the patties to the pan (work in batches if necessary to avoid overcrowding).
- Cook for 4-5 minutes on each side, or until golden brown and internal temperature reaches 165°F (74°C).
- Transfer to paper towel-lined plate to absorb excess oil.

- For extra flavor, add 1 grated apple to the mixture
- Store uncooked patties between parchment paper layers for up to 2 days
- Freeze uncooked patties for up to 3 months
- For a spicier version, increase red pepper flakes to ½ teaspoon
